Vegan Pumpkin Chocolate Chip Pancakes with Apple Compote

Ingredients
  

  • 1 cup white whole wheat or AP flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • tsp ground cloves
  • 1 ¼ cups non dairy milk of choice
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 1 tbsp maple syrup or to taste
  • 1 tbsp flaxseed meal
  • 3 tbsp water
  • cup chocolate chips

Apple Compote

  • 1 ea apple peeled, cored, finely diced
  • ½ tsp coconut oil
  • ½ tsp cinnamon
  • tsp ground cloves
  • tsp allspice
  • tsp ground ginger
  • 1 tbsp brown sugar
  • 1 ½ tbsp grand marnier
  • pinch of salt

Instructions
 

Apple Compote

  • Add oil to a saucepan on medium heat. When hot, add apples and toss to coat.
  • Add spices, stir to combine.
  • Cook for 5 minutes until apples begin to release juices.
  • Deglaze with grand marnier. Reduce to simmer. Simmer until soft about 20 minutes. Adding water as necessary if needed.

Pancake Batter

  • Combine flaxseed meal and 3 tbsp water, set aside
  • In a large bowl combine non dairy milk, pumpkin puree, maple syrup, flax egg, and vanilla.
  • In a medium bowl combine flour, baking powder and all the spices. Whisk until well combined.
  • Add dry ingredients to wet ingredients and mix until just combined. Add more milk to get desired consistency. Thicker batter will yield thick pancakes. Thinner batter will yield thinner pancakes. Fold in chocolate chips.
  • Heat a large nonstick pan or cast iron skillet over medium heat. When hot coat with non dairy butter, oil or a combo of both. Scoop about 1/4 cup of batter onto skillet and spread out a bit if necessary. Cook until bubble appear on top and sides are starting to cook. Flip and cook until golden brown on the underside, about 2 minutes. Eat immediately or put on rack over baking tray and cover with a damp towel and place in a low temp oven to keep warm. 170F degrees.
  • Serve with Apple compote, maple syrup, blueberries and/or more chocolate chips.
